Food safety awareness has increased significantly in recent years. When choosing a restaurant, guests want to feel safe and secured, so the primary purpose is to make high-quality and safe food for consumption. And thus, please the guests. Consequently, the catering industries, in order to maintain market competitiveness and their own profit, implement systems with whom they will ensure food quality and food safety. ISO 22000 is an international standard that ensures food safety and the provision of safe products in accordance with legal requirements and consumer needs. The paper analyzes the food safety management through the HACCP system and ISO international standards, the advantages and disadvantages of implementation and their role in the restaurant business. Based on the analysis and research in this paper, it was concluded that the implementation of a food safety management system brings numerous benefits and is a significant element of business improvement. The conducted analyzes pointed out the importance of the integration of the food safety management system in all business processes and the specificity of cooperation and food procurement. They make companies unique and provide them with recognition in offering safe and quality food and a leading position in the market.
