Abstract Ovaj završni rad sastoji se od tri glavna dijela: uvoda, središnjeg dijela i zaključka. U prvom dijelu razrade teme govori se o turizmu, njegovim počecima, razvoju i važnosti koju on ima u gospodarskom napretku zemlje. Turizam, kao relativno novija pojava, predstavlja fenomen koji je u sve većem porastu i koji zemlji domaćinu donosi brojne prednosti. Upravo zbog toga, njegov utjecaj na modernu ekonomiju je izrazito bitan. Moderan turizam uključuje turista koji traži nova iskustva i očekuje visoku kvalitetu. Ono što modernog turista privlači na neku destinaciju je i hrana odnosno gastronomska ponuda odabrane destinacije. Upravo se zbog toga u nastavku ovog završnog rada obrađuje pojam gastronomije te ulogu koju gastronomija ima u modernom turizmu. Gastronomski turizam definira se kao jedan od najmodernijih oblika turizma koji još uvijek nije dovoljno istražen. Takav turizam odražava kulturno nasljeđe, ali i nacionalni identitet, a temelji se na autohtonim namirnicama koje su temelj zdrave prehrane. U zaključnom dijelu razrade teme govori se o gastronomskim obilježjima pojedinih geografskih regija u Hrvatskoj. Takve regije pokazuju brojne specifičnosti, a gastronomska ponuda je uistinu bogata i raznovrsna. Hrvatska, iako smještena na malom geografskom prostoru, obiluje brojnim namirnicama, a čak i u krajevima gdje su te namirnice oskudne, stvorena su brojna zdrava i ukusna jela. Završni rad završava zaključkom u kojem su se izrekli stavovi do kojih se došlo analizom dostupne literature. Navedeno je i vlastito mišljenje uz isticanje poteškoća do kojih se došlo tijekom pisanja ovog rada.
Abstract (english) This thesis consists of three main parts: an introduction, a central part and a conclusion. The first part of the elaboration of the topic talks about tourism, its beginnings, development and the importance it has in the economic progress of the country. Tourism, as a relatively recent phenomenon, represents a phenomenon that is increasing and that brings numerous advantages to the host country. Precisely because of this, its influence on the modern economy is extremely important. Modern tourism includes tourists who seek new experiences and expect high quality. What attracts the modern tourist to a destination is the food, i.e. the gastronomic offer of the chosen destination. It is precisely for this reason that the concept of gastronomy and the role that gastronomy plays in modern tourism are discussed in the continuation of this final thesis. Gastronomic tourism is defined as one of the most modern forms of tourism that is still not sufficiently explored. Such tourism reflects cultural heritage, but also national identity, and is based on indigenous foods that are the basis of a healthy diet. In the final part of the elaboration of the topic, the gastronomic characteristics of certain geographical regions in Croatia are discussed. Such regions show numerous specificities, and the gastronomic offer is truly rich and varied. Croatia, although located in a small geographical area, is rich in numerous foods, and even in regions where these foods are scarce, many healthy and tasty dishes have been created. My own opinion is also stated, highlighting the difficulties encountered during the writing of this paper.
